Is Cold Brew Tea Better than Hot Brew Tea?

The most notable characteristics of cold brew tea are its lack of bitterness and its sweet flavor.

The main contributors to bitterness are caffeine,

catechins, and catechin oxidation products.

On the other hand, theanine and sugars are responsible for the sweet taste of tea.

Compared to theanine and sugars, caffeine and catechins have larger molecular weights,

making them less soluble in water.

Therefore, when brewing tea with cold water, sweet substances dissolve more readily than bitter ones,

resulting in a sweeter tea.

In contrast, hot brew tea can become bitter due to the easier dissolution of caffeine and catechins.

However, if you want to experience the aroma and strong aftertaste of tea,

only hot brew can bring out these flavors.
