Hello everyone:
I am tea enthusiast Andy.
The age of tea leaves affects their flavor.
Young tea leaves look quite attractive, but are they tasty?
Different ages of tea leaves are suitable for different tea-making methods.
You can't simply judge the taste of tea by its appearance.
When making tea,
green tea uses young leaves, while oolong tea uses more mature leaves.
This is because:
- Green tea is characterized by its fresh and sweet taste, which comes from young leaves.
Young leaves have a high amino acid content and also high catechin content.
Therefore, high-quality green tea is usually brewed at a low temperature
to avoid destroying its fresh and sweet flavor.
- Oolong tea undergoes more stirring during the production process,
so it uses more mature leaves, which are more resilient
and less likely to be damaged during stirring.
Mature leaves have lower catechin content,
so they can be brewed at a high temperature without becoming too astringent.
From the perspective of picking seasons,
green tea is usually made before "Qingming" (Tomb-Sweeping Day), also known as "pre-Qingming tea";
oolong tea is made during "Grain Rain" season,
the next solar term after "Qingming",
when the tea leaves are more mature.
Although "young oolong tea" tastes sweet,
it can be astringent, bitter, and cause stomach discomfort.
Therefore, when buying oolong tea,
you can judge its quality by the maturity of the tea leaves.
That's all for today,
I hope this is helpful for everyone.
See you next time.
