The flavor of aged tea is influenced by various intrinsic factors such as tea variety, fermentation level, tea garden management, climate, and season, as well as extrinsic factors like storage environment changes. In particular, differences in soil composition contribute to a unique "terroir" aroma. The aged aroma of tea develops because fatty substances undergo oxidation during storage, forming free fatty acids, which are among the primary compounds responsible for this characteristic scent. Over time, natural oxidation enhances the tea’s aroma, giving it a mellow, refined fragrance. The taste becomes smooth, rich, and naturally sweet without any harshness. Even after multiple infusions, the tea remains flavorful and does not turn astringent, making it highly durable for brewing.
